No. If a cake mix calls for oil, an extra egg instead of the oil will not give good results. The oil is to give the cake moistness, so an extra egg will not only make it heavier and more dense, but it will also be very dry.

If you are looking for a good vegan alternative, you can just use one can of soda (cola for chocolate cake, or even a strawberry soda, or lemon-lime for a lemon cake?)

Take one cake mix and one 12 oz. can of soda, omit all eggs, water, and oil as per the box directions...just use the whole soda. Bake per the directions on the box, makes a moist and delicious cake!
