when a chicken has its head cut off, there are still nerves working in the body - with no head - it is these nerves that cause the chicken to run for a few seconds after death

(I was told by a teacher at school that they just have a bundle of nerves in their neck, which explains how they can run around headless if their neck was severed close to the base of their head. I guess they would usually die of blood loss when this happens...)
