The most common way is to support the engine from above, drop the frame under the engine and trans-axle, remove the transmission and clutch. Replace flywheel and reassemble.
To replace the clutch, the engine and transmission must be separated. Some prefer to remove the engine, some prefer to remove the transmission, some remove the entire assembly and separate the engine and transmission once they are out of the vehicle. After the engine and transmission are separated, remove the pressure plate clutch and flywheel, have the flywheel resurfaced by a qualified machine shop. Replace the pilot bearing, clutch disk and pressure plate and use an alignment tool to make certain that the clutch disk is aligned between the flywheel and pressure plate. Then reassemble everything.

when you have a clutch put in you also have to replace or remove the flywheel and have it refaced to keep from messing up the new clutch, and yes the flywheel is suspose to turn when the engine is turning, so if the flywheel wasnt replaced or refaced then i would say that the flywheel is what the problem is
You will remove the engine then you replace the clutch plate on the flywheel, You also will have to remove the bearing which sits in the bell housing, and then put it back together again.
Support the back of the engine and remove transmission. Remove clutch and pressure plate. Flywheel is held on with 6 bolts. Install in reverse order. This is a good time to inspect the condition of clutch, pressure plate, pilot bushing and throwout bearing.

not a job for the non mechanical person first you chock wheels on vehicle next remove driveshaft disconect clutch cylander fluid line you then need to use a jack to support rear of engine remove gearbox from vehicle usually need a transmission jack to do this next u then remove clutch from flywheel on rear of engine then check flywheel for cracks as this may need replacing as well if flywheel is good, u then install new cluch, u will need an aligning tool to lign up clutch with flywheel and to support while installing bolts,be sure to tighten bolts in proper sequence now is also a good time to replace clutch slave cylander then you need to bleed the cylanders replace drive saft also a good time to check and replace U joints if needed
to remove the clutch from the flywheel u will 9mm 12 point make sure when u put the clutch or flywheel u torgue it down to vw spec.
The flywheel just bolts up, remove the bolt.
