Answer; The scent. All citrus fruits contain essential oils in their zest. You can demonstrate this, and create your own 'party trick', by squeezing a piece of peel, zest(coloured side)out, toward an open candle, match or lighter flame. The essential oils will be forced out of the zest, bursting into flame, since, as is any oil, it's flammable. Cleaning products using these essential oils all work on the same principle; oil both dissolves 'some' of the dirt (water actually does most of the work), as well as leaving a shiny surface...for a few seconds, anyway, until all the dust you've just kicked up into the air, by the act of dusting, settles...again. So...your answer is two-fold; the difference??? Aroma...and probably...price.

It depends: if you use just a drop, lemon extract might give you a similar taste/smell. But you might be better off leaving the lemon out entirely--which you should definitely do if the lemon extract is artificial and not from real lemon. Note that extract contains alcohol.

Actually, a lemon (as well as oranges, limes, and grapefruit) is a hesperidium.
None they are two different things. Lemon extract is a juice texture and lemon zest is basically grated lemon skin. So if you are making something and you don't have any lemon extract and you replace it with lemon zest, well........ HAPPY EATING :|
