If the water is shutting off and the hiss occurs and you cannot see any water discharge from the head, tap housing or visable pipes then it could be the sign of a small leak possibley behind the wall. One way to do a check is to place a metal bar or similar against the exposed pipe work and place a ear to it. If there is a leak then you'll hear the leak. Turn off the main and again listen. If the sould of hissing stops you most certainly have a problem. Its advisable to check feeds in the bathroom area when you can before you start thinking about knocking out the walls
