Fruit gets sweeter as it ripens due to fermentation. The starches within the fruit are slowly converted to sugar as it sits.

I would say lemon, very sour, although it depends which one you get, some taste sweet.

Well, tomatoes are more on the savoury side. But that is actually hard, because there are hardly any fruits that are not sweet. I have always found passion fruits to be sour, but that might just be chance. Also pumpkin is a lot less sweet then many fruits (most people think pumpkin is a vegetable, but they actually are fruits!)
Acidity, and low pH. If a Gran apple is allowed to ripen fully on the tree so that it has a red blush, it will develop much more sugar and flavor so that it is no more tart than the average apple variety.
Cherries will ripen if picked after they start to change color. You can place partilly ripe cherries in a bowl or paper bag at room temperature and they will ripen to a degree. We have used the technique on sweet and pie cherries as well as wild cherries. Of course they are not as sweet as cherries picked ripe on the tree but they are an improvement over cherries that you don't get at all because the birds ate them! Greg Schneider
