This is not a DIY job. It is illegal to release A/C gas into the atmosphere. You need special equipment to perform this job.
Or you can hook a chain to a fence, and the other end to something that looks like an AC hose, and back up real fast. lol
Remove the AC belt if it is only running the a/c compressor. That will disable it. Why would you wnat to remove hte whole system?
