Most head rest when pulled up all the way have a small base at the top of the seat with a button you push in on to release it.
The Yukon/Suburban has a small hole at the base (where normally, a button is). Push a large paper clip in that hole to release - then while holding pressure on that one, do the other. It takes a few hands to do this, so if you can get help, it is advised.
