That's a big question; Outlook is one of Microsoft's largest products. Essentially Outlook stores email messages, appointments and contact details in a database. Usually, email is gathered and sent using IMAP or POP3 and SMTP but other protocols are supported.

Hotmail(HTML Mail) released 4. july 1996 work as any other email providers. A server for anyone to send or receive online mail(Like a Postal Office). Username @(at) domain/provider.

The use inside Hotmail vary as Microsoft keeps changing it, but you can use it as normally in any email client like any other emails. Email = Electronic mail.

Microsoft also own @Outlook and @Live , and they are all connected to Microsoft Account.

Sender -> SMTP Server -> DNS Server -> internet -> Domain -> MTA Server -> User Account -> Receiver

POP = Send server.

SMTP = Receive Server.

IMAP = Send/Receive(smarter).
