It is not recommended to "play" with your RES. You can and should handle them, but not frequently and not for long periods of time. If you want to bond with it, you can take it out of its tank and let it walk around in the grass, but this can lead to all sorts of problems and should be done under constant supervision in an area you KNOW is safe.
As for leaving it out of the water, RES need to completely dry off at least once a day so that they don't get shell rot and eventually die. If you don't have a basking spot for your RES, get one immediately. It doesn't have to be fancy: a washed river rock will do.
Red-Eared Slider can stay dry for days to weeks, but they cannot eat without water, I mean enough water to site in while eating as they cannot swallow without the ad of water. If you are transporting the red-Eared being dry is okay, keeping a turtle as a pet dry will be almost considered torture as they will slowly die of starvation and dehydration
