I think the answer is simple.Food should go in the refrigerator asap.You can wait a few minutes if just off of a burner.Food needs to be below 40 degrees or above 140 degrees to kill germs to go for any period of time to keep well.Under 40 works best.Ive noticed one problem with leaving food out to cool before refridgerating is that it can easily be forgotton and left out for to long and that is not good.
