Normally, you would change oil & filter at 5 to 6000 kms, or say about 3000 miles. This ensures clean running of the internal parts. Old oil creates sludge, which will block those small oil passages, and wear the parts. You can extend these intervals a little, but not too much. Keeping the inside clean ensures long life of the engine, whether you intend to keep the machine for a long time, or intend to sell down the line. The next buyer will be grateful of the service, and it will be easier to sell. Use a good quality Honda oil, as it has additives specially made to run in this engine.

Really depends on how you ride...do you ride short trips or mostly long, highway miles? If mostly short trips then I'd say change it every 6 months. If mostly long trips then change it every 3,000 miles.

What is the longest one can go before changing the timing belt in a Honda Odyssey?

Timing belts last about 70,000 miles. You should change the water pump while you're in there; Honda likes to drive them off the timing belt, they wear out about as fast as the timing belt does, and since you're in there anyway...
