It was first Lamarck who suggested that if a giraffe stretched its neck reaching for leaves its offspring would have long necks. However, if you take Darwin's theory of evolution if would be that giraffes could only eat leaves that were on very high trees so therefore the giraffe would grow a long neck over time.

Natural selection.

Since the leaves in the tall trees are the food of giraffes, the tallest giraffes get the most food, live the longest, and produce the most offspring.

The genes for "long necks" are passed on. Any "short necked" giraffes would suffer malnutrition and not live to produce offspring.

The animals with longer necks are more likely to survive, because they can reach their food better. The tall genes are inherited to their children, of whom the one with the longest neck is most likely to survive. This can also be used to breed animals withe special characteristics like dogs with long ears.

He would have said that the giraffe, seeing the succulent higher leaves on the tree, would have had a " desire " for a longer neck and would have stretched it's neck towards the leaves enough that it's descendents would then inherit this longer neck.
