Yes, you can play Microsoft Flight Simulator without a joystick, you can play with just a mouse or keyboard, but a joystick makes it much easier.
I have a Sidewinder Force Feedback 2 joystick. It cost about $100. It has a view hat that can look in eight directions. Force Feedback that vibrates then you're taking off or landing, landing gear is retracted, and violently shakes when you crash. It has throttle control and eight buttons.
