I don't have a thermostat in my car will this cause the head gasket to blow?

No, The thermostat just causes the cooling water to get to operating temperature faster. It restricts coolant flow to the radiator until it opens. However, if you replaced the coolant with plain water when this was removed, that could have caused the problem. Plain tap water in an engine, especially one with an aluminum block, may cause a chemical reaction and cause internal damage. Antifreeze helps to prevent this and provides lubrication to the water pump.

you dont. the thermostat comes with a new gasket, its best to use it and its very easy to repalce, just scrape off the old one and put on the new one.

locate the upper radiator hose. follow it from the top right side of the radiator to the engine block. remove the hose from that block , then remove three screws so that little block can be removed where you'll find the thermostat inside. clean the old gasket off both sides of the thermostat housing, replace the thermostat and gasket... dont forget to use a sealant around the edges of the block and the thermostat housing before securing
