Well it mostly depends on what game updates you want to delete. when i delete some updates the game progress does not delete so I'm guessing no it does not delete your progress.

Slightly weird as no update should not allow another game to be played. In the question, you do not specify what happens when trying another game. I will tell you however how to delete all game updates. Firstly, go to settings, then memory. You will see your hard drive, press the y button. This should take you to a option where you can format hard drive, name etc, you will need to select the option to delete system cache. This will only take afew seconds. Now all updates for games have gone.
you can delete the actual game but im pretty sure you can delete the actual update if that helps
No, it will only remove any patches/updates you may have downloaded. The next time you try and play the game it will say and update is avalable and if you decline it you cant play on xbox live until you download it.
