Originally the term oxidation was used to refer to a reaction in which oxygen became bonded to a molecule or other atom, as when iron combines with oxygen to form iron oxide, or rust.

As chemical processes became better understood, it was realized that when oxygen combines in that way, the other atom looses electrons to oxygen as part of the process of creating the chemical bond. Combining with oxygen was a common way this could happen but other reactions also involved loss of electrons and it became convenient to call them all "oxidation," even when the element oxygen was not involved.

So now oxidation is defined as the loss of electrons or an increase in oxidation state by a molecule, atom, or ion and the formation of an oxide is only one example of a more general process.

In the process of fermentation yeast bacteria convert sugar into alcohol which is an oxidation process.
