That will depend how well it has been stored and whether or not the package has been opened. I have used unopened cream cheese 2 weeks beyond the package date.
Every package of salami should have an expiration date that you should go by. If there is no expiration date, the salami should last up to week after opened if in a sealed package or container.
I'd take it back to where I bought it and ask for a new package. If you don't want to do that, throw it out.
What you seem to be describing is a box of government commodity or Velveta Cheese. This is a processed pasterized cheese which is very soft like a Brie Cheese. Just by squeezing the package firmly with your hand you can leave your grabbing impressions. This is great a cheese if you're making Macaroni & Cheese dishes and Nacho Cheese dips.
All drugs have an expiration date. It will be printed somewhere on the package. That's the date that the drugs are no longer potent - doesn't matter if you opened the package or not.
