Typically it is more efficient (and cheaper) to use a set back thermostat. Here is the most basic reason. The rate at which heat is gained or lost by a home or building depends on the difference in temperature between the indoors and the outdoors. Setting the temperature back (higher in the summer and lower in the winter) decreases this temperature difference and thus the total amount of heat gained or lost by the building. When you raise your AC thermostat during the day when no one is home and then cool the house back down in the evening, the total amount of heat removed by the AC during this cycle is less then if you left it cool for the entire time.

I think if you are using a radiant heating system like warm board that can respond quickly to changes in temperature then a programmable thermostat makes sense. However if you are using concrete slab radiant heat, which takes a long time to heat up and cool down a programmable thermostat will be less efficient than leaving it at one set temperature.

It sounds like you have a blown head gasket. Combustion gases can enter the cooling system through either a blown head gasket or cracked cylinder head. if you are going to install anything other than a thermostat, then you are better off leaving nothing. the car will run find without a thermostat, in warm weather. it will still run without a thermostat in cold weather, but i do not recommend it because it will leave the valve open and the radiator fluid will be constantly flowing through the motor. what the thermostat does is block off the flow until the car reaches approx 170 degrees F. then once it reaches this temperature, the thermostat opens up allowing the fluid to flow, and thus cooling off the motor. so, without a thermostat it will just constantly flow, and will simply take longer to warm up. I've ran with without a therm. throughout winter without a problem, but you will have to let it run for 10-15 minutes until the temp. warms up. the thermostat is only a $12-$20 piece, so at that price, why not have one?

The short answer is, not really. If your thermostat is faulty, you should replace it with a new one, and if it has already been replaced, then there is another problem with your car somewhere else. Possibly a blocked radiator or a failing headgasket. The longer answer is, leaving the thermostat out entirely reduces the pressure that your cooling system operates at. This decreases the temperature at which the coolant boils and can cause bubbles of air in the coolant at the hottest places in the engine. These bubbles then act as a thermal insulator which makes those hot parts of the engine even hotter. But your temperature guage will still be showing 'normal' temperatures.
