It is technically raw still, not cooked.

The reason why it's edible when sliced thinly is because it's cured.

Same with Parma ham and Pepperoni. Both edible when sliced thinly because of being cured, not cooked.

The only reason I know this is I used to work at a Deli/Butcher. White Boards/Knives for Cooked, Red Boards/Knives for raw. Salami etc was always cut up in the red section.

salami is made of salted meat and fat and then dried. This process prevents spoilage/bacterial infection and renders the salami safe to eat although it has not been cooked through the application of heat.
