Lactobacillus delbrueckii are Gram-positive(retain the color of the crystal violet stain in the Gram stain process), facultatively anaerobic(can produce ATP with or without oxygen), non-motile(not capable of movement) and non-spore-forming, rod-shaped members of lactic acid bacteria. Lactobacillus delbrueckii is important because when introduced to milk it can convert the lactose to lactic acid by carbohydrate fermentation(anaerobic respiration). Milk has a PH of about 6.5 which is slightly acidic, with the introduction of a Lactobacillus delbrueckii sample lactic acid is produced lowering the PH to about 4.0 which is preferable because it inhibits human pathogen growth.
