The outbreaks in recent years have been caused by Salmonella found inside the eggs. See Related links. If the ovaries of the chicken are infected, the Salmonella could be in either the yolk or the white.

If the shell has not been disinfected or the eggs have been held under insanitary conditions, Salmonella could be on the shell which could transfer to your hands which could then contaminate everything you touch after that.

There is protein in both the yolk and the white. A whole egg typically contains 6.5 g of total protein out of which 3.6 grams is in the white. The quality of the protein in both phases is of the highest obtainable in food. Many people who have bought into the myth that dietary cholesterol is harmful and to be avoided should know that the amount of cholesterol a healthy liver produces in a day is about 1200 mg, equivalent to the amount in about three egg yolks. The thinking that ingestion of cholesterol in food will result in arterial plaque and eventual occlusion of the vessel is overly simplistic and a highly misguided model of how and why plaque forms. Similarly, the notion that total serum cholesterol is indicative somehow of a person's chances of contracting CHD is overly simplistic as well. Since cholesterol is a vital component of every cell membrane in the body it is self-evident that, instead of being a villain, it is an essential substance. It's not so much the quantity that's at issue here but rather what the body does with both endogenous and exogenous cholesterol relative to plaque formation that tells only part of the story. Surely physical activity and the remainder of the diet play a part. It should be mentioned also that cholesterol is only one component of arterial plaque and it is becoming more widely accepted that plaque formation has its genesis in a physical injury to the endothelial (inside) cell wall, which produces a surface irregularity to which plaque-forming components adhere. It is thought that cell wall injuries may be caused by free-radical reaction with some component of the interior cell wall of a vessel that goes unrepaired for one reason or another. This is all to say that discarding the yolk of an egg to avoid CHD is simplistic reasoning in the least and utterly without scientific or even logical merit in the most.
