A great recipe to have when just having a Port Wine and a few nibblies is: 1 medium round of Brie (peel waxy layer off) Put in 4 - 5" dish. Pour over apricot jam (or any jam) on top and cook in oven for 15 minutes until melted. Use Wheat Thins or a spoon and other crackers. It's a hit! The classic cheese to have with port wine is a mature Stilton cheese. In British supermarkets near Christmas they often sell a half bottle of port with a small Stilton in a gift box. I always buy a couple in case I have forgotten to buy someone a present, or I have an unexpected guest. And if I don't I can always eat and drink it myself. Oh dear, now I have to go and have some.
