When recharging the AC, use a jumper wire across the low pressure sensor. That will allow the AC compressor to turn on and draw in the refrigerant.

Usually placing a jumper across the low pressure sensor is unnecessary (I have recharged quite a few fully-empty systems, and each time the compressor will kick on after the first can or two of R134a). The danger in jumping the sensor is that you may be running your compressor completely dry. Double-check instead that the charge port is opening freely, and that your attempted re-charge is not using cheap plastic connectors. The Grand Prix seems to have a pretty stiff schrader valve in the charge port, especially if someone has used "a/c stop leak" in the past, and I've had much better luck with a better-quality metal-ended charge hose.
To disable a kill switch the wiring would have to be modified to bypass the switch. This is not advisable as the switch is a safety feature.
