No, there is no gluten in potato. However, for people strictly avoiding gluten, for processed foods you may need to check for cross-contamination with gluten. Traces can creep in during the manufacturing process, particularly on shared manufacturing lines. Also note that some french fries are made with a wheat (gluten-containing) coating. Other fried products may be cooked in oil that is used for gluten-containing products.

Yes, you can eat potatoes on a gluten-free diet. Gluten is a protein found in wheat, barley, rye, spelt and others. Oats are OK for some if they are labeled as gluten-free (the producer can guarantee no cross-contamination with the other grains.)

It would be one of those moderate foods--small portions and baked without adding anything off the list. Potatoes turn into sugar easily, but like other unprocessed foods, they have good nutritional values. Try rosemary potatoes (cut into quarters and add olive oil, rosemary before baking).

Are mashed potato flakes gluten free?

Potato Flakes, in of themselves, are gluten-free. However, depending upon other added ingredients, they may have gluten contamination. Not only can that gluten contamination be from other ingredients, but can also be from processing equipment. If the facility processes wheat, etc, there can be contamination.Check out Bob's Red Mill Potato Flakes which is manufactured in a facility that also uses tree nuts, soy, wheat and milk.
