Using Adobe Premiere Elements (I assume you have this as you have a prel file) go to "Share" then "Personal Computer". Once there, select "MPEG". This will save you the file in this format. If you don't have it, download Any Video Converter, which is a free download. Add the file you have just made and convert to an "MP4" file. You can now go to your Youtube page and upload it. Absolute best would be Adobe Media Encoder, but it only comes with some of the more expensive Adobe software. I recommend Miro Video Converter if you don't want to pay for anything Adobe (and if you want to still be able to convert video after the free trial expires).
Not all pdf files allow copying. If copying is allowed, highlight the section that you wish to copy. Right click or select Edit/copy or type ctrl-c. Then use the paste command in the program where you wish to insert the text.

I believe to fully benefit from editing FLV that you should first convert the FLV file to a more common format - then use Adobe Premiere Pro, Sony Vegas, Avid or Final Cut Pro (Mac OS).
