The question is driving at the decision to divide Mandatory Palestine between a Jewish State and an Arab State according to UNGA Resolution 181 (II).

However, the qualification of "much" is problematic. While this resolution is responsible for some of the current conflict in the Middle East, most of the sources of Middle East conflicts are endemic to the Middle East and are not due to any UN Resolutions. For example, the Arab-Israeli conflict is the only conflict that resulted from UNGA Resolution 181 (II) and even most of that conflict still would have taken place without a UN resolution since both sides were already fighting. Also the Lebanese Civil War, the Iran-Iraq War, the Persian Gulf Wars, the current Syrian Civil War, and numerous other conflicts in the Middle East have nothing to do with UNGA Resolution 181 (II).

The UN created Israel, as was right and proper. However none of the Arab dominated countries ever agreed or could live with this decision.

What was the Korean Conflict?

The Korean War, from June 25, 1950 to July 27, 1953 , was a conflict between North Korea and South Korea. (Although a cease-fire and repatriations were made, the war was never ended by treaty.)Some consider this Cold War-era conflict to have been a proxy war between the United States and its allies, and the Communist powers of the People's Republic of China and the Soviet Union. The principal combatants wereNorth Korea, supported by People's Volunteer Army (PVA) of Communist China, and later Soviet combat advisors, aircraft pilots, and weapons; andSouth Korea, supported principally by the United States (U.S.), the United Kingdom (UK), and the Philippines, although many other nations sent troops under the aegis of the United Nations (UN).In South Korea, it is often called "625" (the date of the start of the conflict), or, more formally, Hanguk Jeonjaeng. In the United States, the conflict was termed a police action, as the Korean Conflict, under the aegis of the United Nations, rather than a war, largely in order to remove the necessity of a Congressional declaration of war.

Has the United Nations ever intervened in a conflict involving Israel?

Yes the United Nations has intervened in the Israeli - Arab conflicts. The most recent time several years ago when the UN authorized placing French "observers" in southern Lebanon to make sure no missiles could be fired into Israel. This action failed as missiles were launched into Israel from southern Lebanon. The result was an invasion of Lebanon by Israel. Also Israel launched air attacks on Beirut.

Why is it technically wrong to call the Vietnam war a war?

Because Congress never declared war. The United States, as usual, was part of a "Joint United Nations Police Action". That meant we paid for it, did most of it, and lost the most citizens in the conflict (other than the north and south Vietnamese).
