And do your research; if something is a "native delicacy" it probably still has a huge number of common variations and a number of cooks which claim "ah, but my way is the correct/original method".
If you are not able to copy a dish authentically, do not claim that your interpretations is "authentic". Just say that your dish is "inspired by..." something.
