A pet must have a current Health Certificate stating that it has been examined and shows no
clinical signs or symptoms of infectious and contagious diseases; it has been vaccinated against rabies; and it has been treated against echinococcosis within thirty days prior to date of travel. This certificate is valid for 10 days from the date of loading. The rabies vaccination should be given not less than 15 days and not more than one year from the date of arrival in Greece. Birds must have a certificate stating that they are free from psittacosis.

If traveling with a pet do you have to send them in quarantine?

Usually it depends on the size of the dog. If its a small breed
than no, you have to talk to the airline, (you have to have the dog
in a cage) and tell them the situation. Most airlines allow animals
where passengers sit, but you have to buy the dog a ticket
If it is a big dog then, yes, you do have to put the dog below
and the dog has to be in a cage/airline approved pet carrier.
In Addition:
If you are traveling to another country that requires animals to
be quarantined, then yes, the dog will have to travel in
quarantine.
