Whatever they want for the most part, though they tend to remain active in politics and diplomacy and they nearly always write a book or three. Jimmy Carter is/was a major player in diplomatic circles and was probably more successful in that role than as president. George H.W. Bush and Bill Clinton have both been active in philanthropy and diplomacy. George W. Bush wrote a book.
