You probably could, if you are using a little, but the vinegar will give the food a much different flavor than the wine. -------------------------------------------------------- Vinegar is more sour than wine. You could use fruit juice plus just a little vinegar. Depending on what you like yourself, you can substitute other liquids like beer, tomato juice or chicken broth.
Red wine vinegar, if you have it.
Any white wine vinegar will do. Failing that, try apple cider vinegar.

A little baking soda will cancel out the vinegar but it will also raise the sodium--something to avoid if somebody has high blood pressure. You'd be better off starting over again.
I would not recomment it. Sherry is a fortified red wine. You can use vinegar or lemon juice in most recipes calling for white wine.
You could but the results would be completely different and the taste might not be what you want. If it calls for red wine use red wine and don't use wine that is spoiled, you wouldn't use rotten vegetables why do some people use rotten wine ie wine that has turned or has sat open for many days.
I would try Balsamic vinegar with a small amount of virgin olive oil.
You can use cider vinegar or rice vinegar and only the most discriminating palates will tell the difference.
Apple cider vinegar is a vegan product as it uses no ingredients that originate with animals. However, when necessary, another vinegar such as rice vinegar could be used, as could any red wine or simple apple juice combined with a tablespoon or two of white vinegar.
