Iodine test is a procedure that tells whether a certain element or the such contains starch (or sugar) in it.

In this test, we add iodine solution (with, possibly, KI reagent) to a material [in your case, sugar]. If starch ispresent, a blue-black, somehow purple, color will result, changing the initial color of iodine. If starch amylase (sugar) is NOT present, the color will remain orange/yellowish.

How can an iodine stain be used to distinguish between ripe and unripe fruit?

If you add Iodine-KI reagent to foods containing - starch such as bread, potato, crackers, or flour. A blue-black color results. If starch is not present, then the color will stay orange or yellow. (Iodine will not turn blue-black on contact with cellulose or disaccharides such as sucrose in sugar). Thus if you apply Iodine to an unripe fruit (where the sugars are still held as starch) the fruit will turn Blue-Black.However, once the fruit is ripe and the starch has been transformed into sweet sugar, the application of Iodine will only stain the fruit orange or yellow.

How is white iodine made white?

White or "decolorized" iodine is the original product. The most common use of iodine is to sanitize an area of the body prior to performing surgery. The "colorized" iodine allows the surgeon assurance that the proper area is sterilized. Since there is little demand for white iodine, it is difficut to find. White iodine is a salt such as potassium iodide which is clear like table salt. If you put it on your skin, it will be clear, but if you add a little hydrogen peroxide on your skin, it will turn the characteristic orange color of iodine because the iodide will be converted to elemental iodine.
