In medieval Europe, the people believed in Christianity, by and large. But at the same time there were many people in Africa, the near east and Spain who believed in Islam, and in India and the far east who followed Buddha or Hinduism.
Medieval people were religious. The people of Europe were mostly Christian, though there were Jews in a number of places, there were pagans in the North and Northeast, and there were Muslims in Spain.
People had very primitive ideas about science, and believed that disease could be transmitted by foul air. This did not help much when the Black Death hit.
There was a belief in witchcraft, but they were not as excited about it as the people in the Renaissance and Reformation. In fact the legal codes of the Franks and Lombards made witch burning illegal unless the witch could be proven actually to have killed someone with a curse.

They believed in relics of the saints, which do not seem to impress people today. But today people believe in chain letters and Ponzi schemes, which did not impress the people of the Middle Ages.
As I think about it, the people of the Middle Ages were probably less superstitious than people are today. They were not bothered by the number 13, and there were a bunch of other superstitions that have crept into our lives since.
