In heraldry, which is the study of coats of arms, most parts of the shield have no inherent meaning. The design can mean whatever the owner of the coat of arms wants the design to mean. This is the case for animals that appear on the shield, or escutcheon.

An animal on a shield is called a charge. An animal on the side of the shield is called a supporter. Supporters are only granted to people by the King or Queen of the United Kingdom, and imply royal favor; they're given only to royalty, Scottish Chiefs, Scottish barons, and to Knights and Ladies of certain orders. If someone has a dragon supporter, they must be very well-connected!

Depending on who you ask, a dragon may mean power, wisdom, wealth, fearlessness or astuteness. Dragons are associated with the Pendragon family, and red dragons are often associated with Wales. Occasionally, slain dragons appeared in coats of arms, and may mean that someone in the family was a legendary dragon slayer, or that the family had defeated a family that used a dragon.
