There are many types of foods that are eaten by Africans. Meats often eaten include chicken, goat, cow, lamb, and game meats. Vegetables, seafood, and fruits are also eaten. Spices are used liberally in cooking. Sugars are not commonly used, processed foods are also not eaten.
It would be impossible to generalize the meat-eating habits of an entire continenent, but I can shed some light on general practices in West Africa at least.
Meat is often a delicacy or an uncommon food, considering the relative poverty of the region, but there is a longstanding tradition of herding in the region. Currently, Goats and Sheep are the most numerous, and each are eaten quite often, either grilled over an open flame/charcoal, or thrown into sauces and stews and then cooked slowly over an entire day. Rabbits are commonly raised as well.
Chickens are ubiquitous and raised for both meat and eggs. There is also a bird known as the pintard, or guinea fowl, slightly larger than a chicken. Their meat is darker, but delicious. Their eggs are smaller than chicken eggs, and supposedly have more protein in them.
The Fulani/Peuhl people are an ethnicity well known as nomadic cattle-herders. These cattle are related to the brahmin cattle of India and have the distinctive hump on the back. Their meat is usually very stringy or chewy.
Bush-meat is also fairly easy to find the further away from capitals you get. This is whatever someone can catch to sell/eat in the bush. Agouti, or grass-cutters,are common, a form of giant rodent. Their meat is a little sweet and a bit greasy. Other bush-meat includes: bats, antelope, monkey, lizard, rat, and snake.
Pigeons are often raised to be eaten as well, and have a dark-meat consistency much like turkey.
