There's not to much you can do about it now. They will be sweeter than "regular" scalloped potatoes, but many great dishes were the result of an accident. Hope they turn out.

The only way to reduce the salty taste is to add more of the main ingrediants. In this case add more milk a bit at a time tasting the potatoes until you have the right amount of saltiness. You may need to add more precooked potatoe's to prevent from turning it into potato soup.

How much ground thyme do I use in place of chopped thyme
One fresh bunch of thyme is roughly equivalent to one teaspoon of dried thyme.
No I don't think it would work because you need to bake them to get the brown crust that forms on top and in a crock pot there is too much moisture so they would turn to mush.

If you mean dry thyme for fresh thyme, then plan for 1/3 as much dry as fresh. If the recipe calls for 3 tsp of fresh thyme, use 1 tsp of dry.

How many potatoes does each person eat? Are they children or adults? How big are the potatoes? Answer If these are regular sized red potatoes, they should do for 2-3 people, none of which are large eaters. If you have added other ingredients (ie scalloped potatoes) to them, then it may be less .
How big a sprig? You must be specific. But 1/2 tsp dry ground thyme = 1 tsp fresh thyme if that is any help. That's the leaves not including the stem.
