Martini & Rossi is an Italian beverage company, best known for its production of Martini vermouth. Martini is the brand name used for the company's vermouth products.

Vermouth is made from wine, herbs and other aromatic plant products, sugar and added alcohol. Dry vermouth is the unsweetened, fairly bitter, liquor; sweet vermouth has added sugar or other sweeteners.

Martini Rosso is made with red wine; Martini Bianco is made with white wine.

Vermouth is used in many mixed drinks - cocktails - and probably the best know is the Martini, named after the Martini & Rossi brand of vermouth, which is a mixture of gin and dry, usually white, vermouth. The vodka martini uses vodka instead of gin.

The Martini cocktail was commonly known in England as 'Gin and French' because it is made with dry vermouth, often called French vermouth. The same cocktail was also known in England as 'Gin and It', again because it was a mixture of gin and dry - or sometimes sweet - vermouth.

Another well-known cocktail using vermouth is the Manhattan, which is made from whiskey, sweet, usually red, vermouth and bitters.

You can mix vermouth in many other combinations, or drink it straight, over ice and perhaps with a slice of lemon or lime.

Vermouth is used in many recipes, and dry white vermouth can be added to pan juices to make an excellent sauce for seared seafood such as scallops. Vermouth keeps well once opened, so it can be stored in its bottle in the pantry (or refrigerator, in hot climates) for a while, ready to add to sauces and other foods.
