A "spatchcock" is a term used in a professional kitchen. It is a dressed chicken that is split down the back for roasting or broiling on a spit. The word originated around 1775-85. A more modern form is "butterflying a chicken".
There is no French term for spatchcock in French. It is not a usual way to cook or grill chicken in France (it would be dismembered or broached).

Spatchcock is not a bird, it's a method. Similar to butterflying, it's a particular way of flattening any fowl in preparation for laying the entire bird flat on a grill. To spatchcock any bird, simply remove the backbone and sternum, then fold the wings in on themselves, close to the carcass. Lay flat on the grill, turning once until done, then present your guests with your spatchcocked bird.

A spatchcock chicken can be any age, but it should not be too young as it will not have developed good breast meat. Also, if it is too old, say more than six months, the meat may be tough and taste very gamey. Spatchcocking is not related to age, but is merely a method of cooking chicken. It is done by cutting the chicken open along the backbone so that the chicken can be flattened out for cooking.
