Suet is uncooked beef or mutton (sheep) fat. So what you are getting when "frying" a pork loin cannot be "suet." The previous answer, which is actually a question, refers to the fact that a pork loin is typically roasted, not fried.
It is the water coming out of the pork. Most meats in Supermarkets have water injected in them to 'bump' up the price so your basically paying more for some lazy person to put water in the lovely meat and so the retailers can make a profit out of it. Hope this helps!!!
