The details of the Day of Atonement service are described in Leviticus, Chapter 16. It includes

all of the offerings made by fire etc.

Although the Day of Atonement is observed today by Jews around the world, none of the process

described in Leviticus has been conducted in over 1900 years, since the most recent Temple in

Jerusalem was destroyed in the year 70.

Why were female Goats sacrificed by Jewish priests in the Old Testament?

There are only two mentions of female goats in scripture, Leviticus 4:28 Or if his sin, which he hath sinned, come to his knowledge: then he shall bring his offering, a kid of the goats, a female without blemish, for his sin which he hath sinned. And Leviticus 5:6 And he shall bring his trespass offering unto the LORD for his sin which he hath sinned, a female from the flock, a lamb or a kid of the goats, for a sin offering; and the priest shall make an atonement for him concerning his sin. We are not told the "why" of this, but it is to atone for sin/trespass committed.

Who said the 'shema' in the New Testament?

Most likely, the Jewish people living at that time. There is no prohibition against saying or posting this Scripture on a home door lintel. However, it was Christ's revelation of the Father which no one knew at that time (see His prayer in John 17) that stirred the Jewish authorities to plot His demise. Shema simply means 'Hear' and is found in Deuteronomy 6:4:Deuteronomy 6:4New King James Version (NKJV)4 “Hear, O Israel: The Lord our God, the Lord is one![a] Footnotes:Deuteronomy 6:4 Or The Lord is our God, the Lord alone(that is, the only one).A final note: It was in the 12th Century that the Maimonides changed the word 'echad' which Moses wrote to 'yachid' which the Jewish people accepted above the original writings.

A sacrificeLeviticus 12 explains that every time a woman gave birth, she had to wait a certain number of days and then go to the temple and offer a sacrifice. What is the Song of the Lord?

I guess you're talking about where in 2 Chronicles 29:27 it says, "And Hezekiah commanded to offer the burnt offering upon the altar. And when the burnt offering began, the song of the LORD began also with the trumpets, and with the instruments ordained by David king of Israel." It's talking about that, at the time, when they offered sacrifices to God for their sins, they (or someone) sang a song of praise to the Lord -- probably a psalm composed by King David (or Asaph).
