The most common alternative name for a boiler hen is a 'stewing chicken', but 'boiling fowl', 'fowl' and just 'boiler' are all used. A boiler hen is basically a more mature chicken, sometimes one with a first career as an egg-layer, and in that case obviously female. I have been working on the same question as I'm translating a French cookbook, and they really like their chicken distinctions (actually all their distinctions).
