They try to beat you over the head with brakes by changing the Rotos and calipers but they don't always need it. If you have a friend that's a halfway decent mechanic can do it for less than $30.00 (If the rotors aren't messed up). Otherwise, a shop will charge $300.00 - $400.00.
Most common cause is warped rotors.

Try having your tires balanced and rotated. I used to have a car that would shake very bad when applying the brakes and I did everything you did. Then a guy told me to have my tires balanced and rotated and it fixed it until the tires became unbalanced again.

If your grand Cherokee is anything like mine (99 LTD), then the problem is not the brakes slipping, it's the rotors. Jeep had this awesome idea to use calipers that warped the rotors in some of the grand Cherokees and to use some Japanese caliper that is 3 times the price, but doesn't warp them in others. I guess it was luck of the draw as to which one you got. I also developed a ridiculous shimmy between 45 and 55 mph that made my steering wheel shake violently. If you replace the rotors and get your tires rebalanced, the problem will go away for a little while. Mine drove fine for 7-8 months. But when the shakes return, they just magically appear and kind of surprise you. There is currently a class action lawsuit that got settled against jeep for knowingly producing crappy brakes.
