∙ 13y agoA little background chemistry first: oils are triglycerides; esters of glycerin and three fatty acids (which can be the same or different). In an omega-9 oil, at least some of those fatty acids are omega-9 unsaturated.
"Omega-9 unsaturated" means that the ninth bond counting from the end (where the acid is regarded as the "start") is a double bond.
