That depends on the thermostat in the engine, my 4.3 came with a 180 degree t-stat but I've run an aftermarket 160 for several years now with no problems. Max operating temp is 250 degrees (I've had mine to 240 in Death Valley with no problems). To summarize, with a stock t-stat I'd say 180-200 is perfectly reasonable, and up to 215 or so if it's hot and you're idling is no big deal.

The factory operating temperature specification for a Chevy Celebrity is 195o . It is the same for both the 2.5L 4 cylinder engine as well as the 2.8L V6.
