That engine requires a 195 degree thermostat in it.
Depending on the vehicle, either one of the cylinder heads, or, in the intake manifold, near the thermostat. The wire running to it, if original, from the firewall, will be green.
Replace the thermostat.

The 1992 Chevy 3500 temperature sensor is located on the front of the engine. The temperature sensor will be in the vicinity of the thermostat housing.
