The beaked mask reminiscent of a bird skull that was worn by doctors who dealt with victims of the "Black Plague" in history was usually made of either wood of a material similar to ceramics. The purpose of the lengthened beak was that the doctor would pack various combinations of herbs they believed would be useful in preventing the disease inside the long appendage and burn them. Theoretically it was ultimately in fact the thick smoke that was created from burning these potent herbs that stopped any airborne pathogens from reaching many of the doctors. This practice was most popular in Italy although it was seen in many other countries as well throughout the time period in question.
In addition to the various medical reasons the doctors believed wearing these masks helped them it also prevented them from being identified by and therefore establishing any kind of relationship or attachment with their patients. This separation allowed the doctors to deal with people they knew for a fact were terminal with a cold indifference that ultimately saved thousands and thousands more lives.

They thought their clothing (and particularly their bird masks) would keep them from contracting the Plague. The whole costume was designed, or so they believed to ward off the plague. The beak was stuffed with herbs to keep the smell (and they thought the plague) at bay. The long waxed cloak and hat again to ward off the deathly plague and the staff to stop them having to touch the victims.
