What is the recipe for Chancaca cake?

Chancaca Cake

Ingredients for the cake:

• 6 eggs

• 3 cups of flour

• 1 ½ cupo f sugar

• 2 tea spoons of baking powder

Preparation:

Mix the sugar with enough water to make it look like syrup.

Beat the egg whites and add the syrup. Continue beating until it is cold.

Add one by one the egg yolks, the flour and the baking powder and stir softly.

Put in the oven for about 30 minutes.

Ingredients for the filling:

• 1 ½ balls of chancaca.

• ½ kilo of cookies

• 1 tea spoon of grinded zinammon

• 1 tea spoon of clove

• 1 cup of grinded nuts.

• 4 or 5 grated oranges

• 2 cups of water

Preparation:

Put the chancaca in a bowl with the two cups of water. Stir until you have a clear syrup.

Add all the other ingredients and cook on a low heat until the syrup is denser.

Cut the cake horizontally and spread the syrup.

Cover the cake with the remaining syrup and decorate it with grated coconut or nuts.
