Polystyrene can be used to make model aircraft (I'm assuming that's what you meant!) . Depron foam is better than white beaded foam because it is easier to sand and make smooth, also it is easier to repair if you crash the aircraft. If you can only get thin sheets of the stuff, simply glue them together.

High density polyethylene foam. Use heat. Non foam plastic use super glue.
"CA" means cyanoacrylate. You want "foam safe CA."
Spray contact adhesive will do it.
Heat lamination. This process is dangerous primarily because of the noxious gases emitted. Unless you are a professional working with specially designed equipment stick with the glue.
Clearco 444 is safe to use on EVA foam. -Get it at foam and upholstery stores and possibly stores like Michaels.
Chemistry...what kind of foam do you want to make? Here's a fun little bit of research for you. Have you ever used Gorilla Glue? It's a polyurethane glue, made of polyols and diisocyanates. If you were to take a piece of wood, dampen it with a wet sponge, then write your name on the board in Gorilla Glue and let it sit for about an hour, your name will appear in rigid polyurethane foam. Your task: say why the glue foamed. No other glue foams, just polyurethane glue. Why that one?
Foam bricks can be laid as you would lay the bricks used to build houses. As the foam bricks are very light, and easily knocked over, it would be an advantage to glue the bricks with PVA as they are laid (the same as using mortar to bond bricks).
