check brake hoses. check brake fluid condition, if fluid is contaminated or mixed with wrong fluid, calipers can lock-up or stick. check caliper bolts, hardware, caliper brackets. replace if broken, bent, or missing.
Sticking brake calipers. This can be caused by moisture in the brake fluid which will cause the calipers to rust. Replace the calibers and replace all the brake fluid. It can also be caused by driving with your foot on the brake.

You probably did not lubricate the calipers when you changed them and they are sticking. Or its entirely possible that the rotors are too thin. Always clean and lubricate the brake assembly before reassembly.

Sticking calipers can cause a few symptoms. If they are stuck open, you will have difficulty stopping. If they are stuck closed, you will feel like you are breaking at all times. You will drive slowly and have trouble accelerating. If they stick intermittently there will be a delay between pressing the break and actually slowing down and slowing may be jerky. Then when you release the break peddle you will feel a slow release of the break which will result in slow acceleration. I suspect there are multiple possibilities but the first which comes to mind for me are sticking brake calipers. A sticking caliper will cause a vehicle to veer to one side. In some cases you will note a grooved area in your brake rotor (disc), metallic shavings around your tire well and even a 'hot' metal smell after driving. Wheel bearings may cause a grinding noise possibly as well but not as common as will a bad half shaft (axle) but these tend to 'pop'.
Warped brake rotor(s). Brake pads and calipers should also be inspected.
