Athens was evacuated without a fight in 480 BCE as the Persians advanced. A small foce of diehards on the Acropolis was captures, the remainder fought alongside the other southern Greek forces in the navy and army.
They reoccupied their city after the Persian defeat in 479 BCE and rebuilt the destroyed and looted parts. They also built better walls to defend the city and its port, which came in good stead not against Persians but rather the other Greek cities in the Peloponnesian War fifty years later.
After he captured it, and before he moved on to take over the eastern provinces of the Persian Empire. As it had been the capital of the Persian Empire, it's destruction took away the symbolic centrpiece of Persian resistance.

They formed an alliance because they wanted to rebel against the Persians. Athens had all the brains and Sparta had all the war like abilities. Athens needed someone that was good in war. Even though Athens had a strong army it was still too small to over ride the Persian Empire. The Persians were a common enemy for Athens and Sparta. They both had something in common; liking the Persians. So the more people Athens had in their army the more likely it is for Athens to win. In the end Athens does win the war against the Persians but there are many more wars the Athenians and the Persians have had against each other.
